Minestrone Soup

Not only is this minestrone soup the perfect meal for a chilly day, it's also an easy way to get your daily serving of veggies. You'll be hard to pressed to find a recipe that combines more delicious vegetables together than this one.

Cooler temperatures instantly make me want to make soup for every meal. An added bonus with this recipe is that it's easy to freeze. However, if you decide to go this route be sure to forgo adding the noodles. They don't freeze well.

Ingredients
  1. 1/4 cup olive oil
  2. 2 cups chopped carrots
  3. 2 cups chopped celery
  4. 3 cups diced onion
  5. 1 quart tomatoes
  6. 1 can tomato sauce
  7. 1 can green beans (15 oz)
  8. 1 can kidney beans (15 oz)
  9. 1 can white beans (15 oz)
  10. 1 cup chopped green cabbage
  11. 1 T salt
  12. 3/4 tsp pepper
  13. 1 1/2 tsp garlic powder
  14. 1 1/2 tsp basil
  15. 1 1/2 tsp oregano
  16. 4 T beef bullion
  17. 10 cups water
  18. 1/2 cup brown rice (uncooked)
  19. 1 cup frozen peas
  20. 1/2 cup chopped fresh spinach
  21. 1/2 cup macaroni or shell noodles (uncooked)
  22. 1-2 cups chopped zucchini
Instructions
  1. Saute carrots, onion and celery in olive oil.
  2. Add tomatoes, tomato sauce and cans of beans (drained).
  3. Add all ingredients from cabbage to brown rice and simmer for 35 minutes on low.
  4. Next add peas, spinach, noodles and zucchini.
  5. Simmer for 15 more minutes.
  6. Be sure not to overcook or the beans will suffer.
  7. Garnish soup with parmesan cheese if desired.
Notes
  1. This recipe freezes well but don't add the noodles if you plan to freeze the soup. The noodles don't freeze well.
