I totally have a thing for muffins, actually, let's change that because it's not quite accurate. I have a thing for good muffins. The fluffy, full of flavor ones that are equal parts a good breakfast and a delicious snack. Those muffins? Ohh my gosh, I just can't have enough of them.
These Buttermilk Berry Muffins are exactly like that. They are good, like next level good. They are delicious, and packed, and fluffy, and heaty and filling, and light, and tasty all at the same time. They are an explosion of flavors and textures in the best possible way.
They also make an incredibly good breakfast or a quick super light lunch and you can even have them as a snack. Yes, they are that good and that versatile.
The reason why they are so delicious is that you have the slightly tangy flavor of the buttermilk perfectly mixed with the tartness of the berries and the sweetness of the sugar. It is the ultimate flavor combo if you ask me.
They also hold up great so you can make a big batch one day and then have enough to last you a week. And if you want to make an even bigger batch to have enough breakfasts and snacks for a month you can even freeze them for up to 6 months. Once you are ready to eat one just pop it in the microwave real quick or let it thaw for a couple of minutes before eating it.
Eat them at room temp or fresh hot out of the oven with a good spread of butter and a little bit of fruit jam.
- 1 ½ Cups flour
- ½ Cup oats
- 1 Cup sugar
- 1 Tsp ground cinnamon
- 1 Tsp baking powder
- 1 Tsp vanilla extract
- 1 Cup buttermilk
- 2 Eggs
- ½ Cup butter
- 1 Cup fresh berries
- Preheat oven to 400°F.
- Line a muffin tray.
- In a bowl mix the flour, oats, sugar, cinnamon, and baking powder.
- In a different bowl, mix the vanilla, buttermilk, eggs, and butter.
- Fold the bowl with the wet ingredients into the one with the dry ingredients.
- Beat until well combined.
- Scoop the muffin batter into the liners.
- Top with the fresh berries
- Place in the oven and bake for 15 minutes or until a toothpick inserted comes out clean.
- Serve and enjoy.
