There’s nothing better than a good ol’ stack of Lemon Waffles. There’s seriously something about the fluffiness, the flavor and the easiness of the recipe that makes this a staple during the weekends in our home.
Actually, one of my favorite things about this recipe is how comforting and cozy it is! I mean this is one of those recipes that’s not only delicious, but it’s also a family favorite and incredibly good to share with the ones you love with a steaming mug of coffee or hot chocolate and some orange juice.
I also love that the lemon flavor is subtle and not overpowering. While I love flavor-packed recipes as much as the next gal, sometimes I prefer recipes that are subtle and that let me add more toppings and spreads, instead of overpowering my palate with an explosion of lemon flavor.
And can we please talk about the fact that these waffles are rich and soft and so good they almost melt in your mouth? Seriously this is one of the most delicate waffles you’ll ever have (but don’t worry, they are way beyond easy to make). The reason why the are so rich? We are only making them with egg yolks.
I know it may seem crazy but only using the egg yolks guarantees that the Lemon Waffles end up more rich and flavorful and that they end up with that melt in your mouth texture that I love. However don’t discard the whites just yet because we are also using them! We are going to make a fresh meringue to top the waffles and take them to the next level of deliciousness.
Then it’s just a matter of cooking them and serving them all warm and delicious topped with your homemade meringue.
- 2½ Cups all-purpose flour
- 2 Cups milk
- ¼ Cup vegetable oil
- 2 Egg yolks
- 2 Egg whites
- ½ Cup sugar
- 1 Tsp vanilla extract
- Pinch of salt
- 2 Tbsps lemon juice
- 1 Tsp baking powder
- ½ Cup lemon, sliced
- Preheat the waffle maker.
- Blend the all-purpose flour, milk, vegetable oil, egg yolks, half the sugar, baking powder, and lemon juice.
- Grease the waffle maker and pour the batter.
- Cook for 4 minutes or until golden brown.
- While cooking the waffles beat the egg whites with the vanilla extract, salt, and remaining sugar until stiff peaks are formed.
- Serve the waffles with the meringue and lemon slices.
- Enjoy.
