I love brownies, actually scrape that, because it's more like brownies are my favorite dessert on the planet. They are fudgy and crunchy at the same time, they are really indulgent and also everyone loves them. So when you make a fresh batch you are sure that the whole crowd is going to rave about them.
These brownies have all those things we know and love but elevated. They are not only fudgy, they are so fudgy it's almost impossible. They are not only delicious they are mind blowing good. And they are not only a crowd favorite, they are the type of dessert that flies off the table in 3 seconds flat.
But what I love the most about them is how well they pair with the strawberries (they are called strawberry brownie bites for a reason after all!).
The combo is just, simply put, the best thing you'll have.
The berries when baked get so juicy and flavorful it's almost like fresh jam. the juices of the berries also mingle with the brownie so the whole bite has some of that fruity flavor which in returns amps up the deep cocoa flavor.
They make a beautiful gift as well, wrapped in some cellophane or you can even give them in a box like you would with nice chocolate. Or you can go with the homestyle way and have a big serving platter of warm brownie bites and a couple of buckets of vanilla ice cream. Trust me when I say a couple of these strawberry brownie bites and a scoop of vanilla ice cream is the yummy.
- ½ Cup chocolate chips
- 1 Cup milk chocolate
- 1 Tsp vanilla extract
- ¼ Cup coconut oil
- ½ Cup flour
- ¼ Cup strawberry jam
- 3 Eggs
- 1 Cup sliced strawberries
- Preheat oven to 350 F.
- Grease a muffin tin with cooking spray.
- Heat the milk chocolate and melt the chocolate chips, then pour into a bowl.
- Incorporate the vanilla extract,coconut oil, and flour.
- Use a hand mixer to combine well.
- Beat in the eggs and strawberry jam until thick.
- Pour the batter in the muffin tin and top each brownie mix with a strawberry slice.
- Take to the oven and bake for 20 - 25 minutes or until a toothpick comes out clean.
- Remove from the oven.
- Serve warm and enjoy.
