This corn fritter recipe is both simple and quick to make. All the ingredients you need to have on hand are a can of creamed corn, eggs, butter, sugar, salt, baking powder, and flour. You’ll also want to have a some vegetable oil on hand so you can fry these fritters up to golden perfection. Frying them in a cast iron skillet works really well.
For a more pancake-like texture, simply add milk to the batter until you reach the right consistency. We recommend starting with 2-4 tbsp and adding more milk if needed. You can always add more milk but it’s pretty hard to take it out once it’s been added. If you choose to go the pancake route, you’ll also want to use a griddle instead of a frying pan.
Fried in true corn fritter fashion or cooked as pancakes, this recipe is a delicious alternative to more traditional breakfast options. We have’t tried it yet but feel pretty certain these fritters would be good served alongside a savory helping of bacon and eggs. You could even add some salsa and sour cream for added Mexican flair. The possibilities are endless!
Corn Fritters
- 1 can creamed corn
- 2 eggs
- 2 tbsp melted butter
- 2 tbsp sugar
- 1/2 tsp salt
- 2 tsp baking powder
- 1 1/2 cup flour
- vegetable oil ((for frying))

Mix all ingredients together in a medium bowl.

Heat vegetable oil on the stove in a skillet/pan.

Once oil is hot, drop spoonfuls of batter into the pan.

Fry fritters until golden brown, about 1-2 minutes.

Remove finished fritters from the oil with tongs.

Serve hot with maple syrup and butter.
To make pancakes instead of fritters, simply add milk to the batter until you reach the right consistency. Bake on a griddle as you would with typical pancake batter.
